Easiest salad ever! This watermelon greek salad is refreshing, crisp and cooling. It’s filled with cucumbers, kalamata olives, red onion and fresh herbs, then drizzled with a honey lemon dressing. It’s delicious!

This watermelon greek salad is made with fresh watermelon chunks, sliced cucumber, kalamata olives, crumbled feta, a ton of fresh herbs and honey lemon vinaigrette.
This is essentially my favorite greek salad where instead of using tomatoes, I use watermelon.
Instead of those juicy cherry tomato sounds, crisp sweet watermelon comes into play and works like magic.
We already know that watermelon is fabulous with feta. And of course, it works with fresh herbs, lemon and cucumber too. The olives add a buttery, savory richness that complements this crisp melon super well.
I love a refreshing summer salad just like this. It’s perfect to make and take to the pool or beach. It’s a lovely light dish on a super hot summer evening. And it’s the best lunch, served with toasted sourdough. You can even add some chickpeas, grilled chicken or salmon.
You can’t go wrong.
And we’ve been experiencing crazy hot days here – temps reaching 95 and above. So a cooling, refreshing salad is a must. Give me all that water content, please!

Watermelon
Cucumbers
Red onion
Kalamata olives
Feta cheese
Mint
Parsley
Dill
Lemon
Honey
Red wine vinegar
These ingredients are all ones that I absolutely adore. They are bright and fresh and tart and briney. The textures work beautifully together and they create a wonderful side, starter or even main salad dish.

Best news ever: this is one of those salads that you can combine ahead of time. Since it’s lettuceless, you can toss these ingredients together and store them in the fridge for your lunch the next day. They get even better as they sit!

Watermelon Greek Salad
Ingredients
- 3 cups watermelon chunks
- 3 baby cucumbers, sliced
- ¾ cup pitted kalamata olives, sliced
- ½ red onion, thinly sliced
- ⅓ cup crumbled feta cheese
- ¼ cup fresh mint leaves
- ¼ cup chopped fresh parsley
- 1 tablespoons chopped fresh dill
honey lemon vinaigrette
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh lemon juice
- 2 teaspoons honey
- 2 garlic cloves, minced
- ¼ teaspoon dried dill
- kosher salt and pepper
- ½ cup olive oil
Instructions
- In a large bowl of plate, combine the watermelon, cucumber, olives, onion and feta. Top with the fresh mint, parsley and dill. Sprinkle everything with salt and pepper.
- Drizzle the dressing on top and serve!
honey lemon vinaigrette
- Whisk together the vinegar, lemon juice, honey, garlic, dill and a big pinch of salt and pepper. Whisk in the olive oil until emulsified.
