Smoked Turkey, Provolone & Potato Chip Summer Sliders.
Turkey summer sliders are perfect for a beach or pool day! Honey mustard, smoked turkey, provolone and potato chips are topped with a tangy lettuce salad. Just slice and serve!

Feels like that’s the summer call. Who wants a perfect tiny little summer sandwich?! Complete with smoked turkey and provolone and lettuce salad and chips and honey mustard and more.
UM YES PLEASE.

I want a sandwich!
When I was a kid, there was nothing better than a sandwich when we came up from the beach or pool. And that sandwich had CHIPS ON IT.
I’ve been a huge proponent of potato chips on sandwiches my entire life – they are one of my most favorite things ever.
And so here we have the best summer sandwich slab that you can throw together for the day. Lunch, dinner, poolside snacks or more.
Here’s how our sliders come together!
First, you need a slab of slider rolls. You can use hawaiian rolls, but I really love the buttery brioche rolls over the sweet bread version. Slice them in half lengthwise, creating a bottom slab and a ton slab.
Next, a spread. I go with honey mustard since it is our favorite. My family has been obsessed with this honeycup mustard for over 20 years. It’s the best.
Okay – my favorite part. The chips!! For me, it’s a toss up between kettle cooked potato chips and baked potato chips. I also need to emphasize that I am not really a chip person, like I don’t care about them as a snack. Not my salty snack of choice. But on a sandwich? Dreamy.
Next, smoked turkey.
After that, provolone slices.
Finally, a lovely little lettuce salad. Sure, I wax poetic about the chips being the best part, but really THIS is the best part. Remember a few years ago when the tiktok grinder/sub sandwich situation went viral? I’ve been making a lettuce salad like this for years, because it MAKES a sandwich.
It’s truly fabulous.
My ideal lettuce salad includes shredded lettuce (groundbreaking), sliced pepperoncini, sliced red onion, red wine vinegar, a touch of mayo, salt, pepper, oregano and garlic.
Oh my word. This makes every sandwich better, I promise you. This is the thing that makes me want to eat a sandwich. It adds SO much.
P.S. I throw some tomatoes on top then too.
The last step is topping off the slab with the buns.
Use a knife to cut these up or pull them apart. Everyone goes wild!
This is definitely a sandwich you could make before the beach – you can take it to the pool or beach for lunch. But if you do that, I suggest adding the chips right before serving so they don’t get soggy. When the soft bread and the lettuce salad, they won’t stay crispy for hours.
The best part of this sandwich is that it’s an IDEA. It’s a method and inspiration for you to make your own summer sliders when you’re packing up for a day at the park or beach, or to have at home when you want to make an easy snacky dinner.
The recipe below is just a guideline – add as much or as little of the ingredients that you would like. Make it your own.

Turkey Summer Sliders
Turkey & Provolone Summer Sliders
Ingredients
- 2 tablespoons mayonnaise
- 1 ½ tablespoons red wine vinegar
- 1 garlic clove, minced
- ¼ cup sliced pepperoncini
- ¼ red onion, thinly sliced
- ½ teaspoon dried oregano
- kosher salt and pepper
- 12 ounce package dinner rolls, like brioche or hawaiian rolls
- ½ cup honey mustard
- 1 to 2 ounces potato chips, plain, BBQ, salt and vinegar
- 6 to 8 slices smoked turkey deli meat
- 6 slices provolone cheese
- 4 cups shredded romaine lettuce
- 2 tomatoes, sliced
Instructions
- In a bowl, whisk together the mayo, vinegar and garlic. Stir in the pepperoncini, onion, oregano and a big pinch of salt and pepper. Set aside.
- Slice the slab of rolls in half lengthwise. Set the top of the buns aside.
- On the bottom slab, spread the honey mustard. Top with a layer of potato chips.
- Add on the provolone slides. Add on the smoked turkey.
- Add the shredded lettuce to the bowl of dressing and toss well, for a few minutes until everything is incorporated.
- Add the lettuce on top of the turkey. Top with the tomato slices. Top with the top slab of buns.
- Slice and serve!

Definitely going to make these! Any idea how long the lettuce salad would keep?
In the recipe you have 1/4 red onion, thinly sliced. Is that actually 1/4 of an onion or 1/4 cup of red onion? This looks lovely and I can’t wait to make it.
