My recipe for Gooey Butter cake comes from Springfield, Illinois in the early 1970’s. That’s about an hour and a half from St Louis. Mine has all the same ingredients except for the powdered sugar. Mine is 3 1/2 cups. It makes the topping part much more luscious. Also? I always used salted butter with no ill affects, but please don’t use low-fat cream cheese! I would have young people in my office BEG for me to bring it. They would even pool their money for the ingredients. Had to get my first full time job in 25 years at age 55, and I was a good 30 years older than anyone else. How to make friends and feel a part of a great group at a very scary time for me! I retired in 2023, and we are still friends. Love my work family.
