Hot Honey Bacon Wrapped Dates.
These bacon wrapped dates are a favorite snack! Dates stuffed with goat cheese, wrapped in bacon, cooked until crispy and warm and then drizzled in hot honey. Sweet and salty perfection!

This final recipe of the year may not be a pretty one, but it is DELISH.
Savory.
Sweet.
Creamy.
Cheesy.
Crunchy.
Sticky.

Bacon wrapped goat cheese stuffed dates are nothing new or exceptionally exciting – I’ve made them for years and never thought they warranted an actual blog post.
But then!
I went and drizzled them with hot honey while still hot and my life was forever changed.
If you need the perfect snack for new year’s eve or even new year’s day, these are it!
And they are really quite easy to throw together.
I have a few recipes for hot honey here on the blog – I always made it at home before it was readily available. But these days I can find it at Target (used to find it at ALDI too!) and the Mike’s version is pretty much everywhere. Plus, it’s super good.
All you need? A pack of dates, some bacon, goat cheese and the honey. That is IT!
I slice the date lengthwise, but not all the way through. Remove the pit, then stuff it with some goat cheese. Just this past week I made these with a chipotle goat cheese which was also incredible, so a flavored version would work too!
Once the dates are all stuffed, wrapped half a slice of bacon around them. I don’t like the bacon to be layered – it can overlap slightly, but only use a half slice so it cooks through and gets crispy. I secure the bacon with a toothpick! This also makes it easy to serve the bacon wrapped dates.
Once that’s done, I bake them! Bake until the bacon is super crunchy and crispy – I also rotate the dates once or twice during cook time so it alllll gets crispy. YES.
When the dates are done, drizzle with hot honey and serve.
Uh huh, it is that easy.
This is one of those snacks that you just can’t stop eating. They are salty and sweet, crunchy and soft. Tons of texture, tons of flavor and a huge huge crowd pleaser!
Bacon Wrapped Dates
Hot Honey Bacon Wrapped Goat Cheese Stuffed Dates
Ingredients
- 20 medjool dates
- 10 slices bacon
- 4 ounces goat cheese
- hot honey, for drizzling
Instructions
- Preheat the oven to 400 degrees F.
- Slice the dates open lengthwise (do not cut the entire way through!) and remove the pits. Stuff the inside of the dates with some of the goat cheese.
- Cut each slice of bacon in half and wrap half of the slice around a date. Secure with a toothpick. Place the dates on a baking sheet.
- Bake for 10 minutes, then flip the dates over (I use kitchen tongs for this) and bake for 10 minutes more, or until the bacon is crispy and crunchy on all sides.
- Remove the dates and drizzle with hot honey.
- Serve immediately!

Hey! I’m planning to have these on Christmas Day. I’m soooooo excited to try them. I was wondering if they could be assembled ahead of time, then set out to come to room temp and baking right before serving?

I stuffed mine with cream cheese and they were amazing! The hot honey adds a next level flavor. I let guests choose if they wanted hot honey (not everyone likes spice) but I thought it was imperative. Not overly sweet.
