Sheet Pan Gnocchi and Roasted Vegetables.
Our prayers have been answered and they come in the form of sheet pan gnocchi.
This is our newest obsession.
When I say obsession, I mean this is serious obsession.
Why I never thought to throw gnocchi on a sheet pan and roast it to perfection? While cherry tomatoes burst with flavor and peppers and onions get all caramely and golden?
I HAVE NO IDEA.
What is wrong with me.
Think of an easy and fast meal that tastes different from all the other easy and fast meals you make. This is it!
My oh my, what do I love about the sheet pan gnocchi?
It can be a side dish. A side dish to just about anything, really! Pair it with grilled chicken or even a salad or salmon.
But for most, it can be an entire meal. It’s like a roasted veggie pasta and it’s simply delightful.
And if you’re really feeling it, you can always add something like smoked turkey sausage to the pan too and roast it right along with the gnocchi and the veggies.
It is such an easy meal. Embarrassingly easy, actually. Yes those are my favorite kind, of course.
With a drizzle of olive oil, lots of herbs (fresh and dried), some garlic and seasonings and a sprinkle of cheese, it’s super flavorful. So much more than I would have anticipated.
The gnocchi also get this slight crisp to the outside. You know I love that! It’s a toasty little bite. Not super crispy, but toasted to perfection!
And P.S. you can also do this with Trader Joe’s cauliflower gnocchi! More in the recipe card below.
This sheet pan gnocchi is also one of those meals that is perfect for nights when you get home from work and need to prep something quick. Throw it all on the pan (you can even chop your veggies ahead of time, like on Sunday or the morning of!)! Let it roast and get all flavorful while you do a few things around the house or binge a couple youtube videos, and then boom. It’s done!
This easy weeknight dinner is ridiculously palate pleasing.
Sheet Pan Gnocchi
Sheet Pan Gnocchi and Vegetables
Ingredients
- 1 16 ounce package uncooked potato gnocchi
- 1 pint grape tomatoes
- 1 red bell pepper, chopped
- 1 orange bell pepper, chopped
- ½ red onion, chopped
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon freshly cracked black pepper
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- 1 pinch crushed red pepper
- ¼ cup freshly shaved parmesan cheese, for topping
- sprinkle of fresh herbs
Instructions
- Preheat your oven to 425 degrees F. Line a baking sheet with aluminum foil and spray with nonstick spray.
- Spread the gnocchi, tomatoes, peppers and onions on the baking sheet. Drizzle with the olive oil. Sprinkle with the garlic powder, salt, pepper, oregano, basil and crushed red pepper and toss well to combine everything. Make sure everything, especially the gnocchi, is seasoned well!
- Roasted for 20 to 25 minutes, tossing once during cook time. You want the tomatoes to be bursting and the peppers to be soft and caramely.
- Serve the gnocchi immediately. Sprinkle with the parmesan cheese and a sprinkling of fresh herbs!
- To make this with Trader Joe's cauliflower gnocchi: make sure your pan has nonstick spray on it and that the gnocchi are not clumped today. You do not need to defrost the gnocchi, but make sure any large pieces of ice or freezer burn are removed. I roast for about 25 to 30 minutes with the TJ's cauliflower gnocchi. The outside may not get quite as crisp and toasty as potato gnocchi.

This Did not work out for me. My gnocchi was super chewy and way overcooked.
This worked so well, and was such an easy and healthy meal. I added some thinned out pesto as a sauce after cooking. This is a great idea, and I’ll continue to use this method.
YUM super awesome idea for a weeknight. Thanks for the idea! Nice and light, lots of veggies and great leftovers. TJ regular gnocchi comes out chewy (Good) and reheats well too.

Oh my goodness, this was so good and so quick and easy! I made it as instructed and it was delicious. When I grabbed seconds, I added a small spoonful of ricotta and that was excellent too! Cant wait to try other combinations, this is definitely going in the regular rotation.
I’m making this for the 3rd or 4th time tonight. It’s super fast and tasty.
Only adjustment I make is: cutting the baking time to 18-20 mins, sprinkle the Parmesan on top and then put under the broiler til things get a little brown and yummy – takes just a few mins for my oven.
This was SO easy and delicious- added to the quick weeknight dinner rotation. I turned on the broiler for the last 2 mins of cooking to get a little more color and scattered shaved parm over the sheet pan as soon as I took it out of the oven so the cheese got a little softer. So good!
This is amazing. I used fresh garlic and herbs, and threw some zucchini and mushrooms in.
Really enjoyed this. As did the rest of the family. Easy, quick. Will probably use more tomatoes next time (personal preference) and its also easy to adjust the seasonings as one likes. Definitely will make this again.

My family has food sensitivities and can’t do peppers. Thoughts on using other veggies (like zucchini, green beans, etc)?
Hi! Any suggestions of other veggies that might work well with this? (Similar cook time, etc). I’m not a huge fan of tomatoes, so was hoping to reduce or remove those and add something else. (Another family member is not a fan of onions, or I would just increase the other veggies listed!)

I used zucchini, I think cauliflower would work. I’m not a big fan of tomatoes either, but when I cook with them I always remove the seeds, I find them too bitter. This recipe was honestly VERY good! Peace.
YUP, this was Delicious! I served it along with an artichoke chicken recipe from the James Beard Foundation web site, which was good, BUT, and we both preferred your roasted veggies more! Thank you for sharing, glad I found you!

Made this for dinner tonight. Added chunks of cooked chicken. I also substituted Tuscan Herb olive oil from The Spicy Olive in West Chester, Ohio. This was fast, easy and beyond delicious thank you for sharing.
Don’t use foil! It sticks and the gnocchi don’t get nearly as crispy. I sadly couldn’t find my tried and true Bon Appétit recipe and followed this one and the foil ruins it. It’s so much better straight on the pan or maybe use parchment. Also- roast garlic alongside it and that mash it with some lemon juice to put on at the end. Sooo good. Just don’t use foil!

I didn’t have yellow peppers so doubled up on red ones; making Lenten meals this year, my husband and I both really liked it, had it as a side with fish filet with lemon caper sauce; made enough for leftovers the next day; will definitely make it again, maybe add chicken Italian sausage or zucchini
I just made this. OML it was sooo good. Before I ate it, I was thinking, ‘olive oil sauce, it could taste bland’. Boy was I wrong, It didn’t taste bland at all with the spices. And the crispy gnocchi made it extra good. My mum asked me to drive up to her house just to make it. And an added bonus is that it’s so easy. I will be making this a lot.
