Sticky Apricot Chicken and Broccoli.
New favorite dinner alert! This apricot chicken is about to take things over the top.
I’m not sure I can even explain how much I LOVE THIS DISH.
Holy cow. It is the best chicken recipe I have made in quite a while.
And you know! I’m always working on non-boring chicken recipes for dinner. The minute we fall into a dinner rut, especially when it involves chicken, I am over it. Instantly.
But that will not happen here. Because this meal is divine. And I’m certain that you could use almost any flavor of jam and it will work. I mean, sure, I don’t know if I’d suggest strawberry, but it will still work.
You get it.
This meal comes together quickly too, especially for how wonderful it tastes. Yes you have to make the chicken and the sauce. But it tastes much fancier, like you threw a lot more time into it. The chicken is tender and juicy, the sauce is savory and sweet. Basically all the things I love in one dish.
So! I like to serve this with roasted broccoli. But you can do whatever you want to the broccoli! Steam it. Use a frozen steamer bag and make it in the microwave so you can just add it to the chicken. Whatever makes it easier for you. Heck, even use other veggies like snap peas or green beans or what you have on hand. What’s about to die in the fridge?
Use that!
And then!
And then serve it with some brown jasmine rice. I could profess my love for jasmine rice over and over again. It’s just the best. Fragrant. Wonderful. Soaks up some of the sauce and if we’re being real, a few spoonfuls of sauce and rice are the best bites you will take. I might have stood over the skillet with the pot of rice and the extra sauce.

The apricot sauce is what makes this for me. It’s made with apricot jam, soy sauce, a touch of brown sugar and garlic. When added to the pan, the sauce gets even stickier, bubbly and just.so.good.
The chicken is already in its best state: golden and toasty brown from that coating of flour. Then you go and add the sauce on top and let it simmer…oh my word. It’s LOVELY.
The kids loved it. Eddie declared it some of the best chicken ever! I now want to make it every single day. Typical.

Sticky Apricot Chicken and Broccoli
Ingredients
- 1 to 2 heads broccoli, cut into florets (about 3 to 4 cups)
- olive oil for drizzling/spraying
- salt and freshly cracked black pepper
- 1 pound chicken breasts, cut into 1-inch pieces
- ½ teaspoon garlic powder
- 3 tablespoons all-purpose flour
- 3 tablespoons olive or canola oil
- ¾ cup apricot jam/preserves
- 1 garlic clove, minced
- 2 tablespoons soy sauce
- 1 ½ tablespoons brown sugar
- 2 tablespoons chopped chives, for garnish
- brown jasmine rice, for serving
Instructions
- Preheat the oven to 425 degrees F. Place the broccoli on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, or until slightly charred.
- While the broccoli cooks, prep the chicken. Toss the chicken with salt, pepper and garlic powder. Sprinkle the flour all over the chicken and toss well until it’s coated.
- Heat a large skillet over medium heat and add the oil. Add the chicken in a single layer. Cook until browned on each side, about 5 to 6 minutes per side.
- Whisk together the jam, minced garlic, soy sauce and brown sugar until combined. Once the chicken is brown, pour the sauce in. Stir to coat all the chicken. Simmer for 2 to 3 minutes, so the sauce thickens more. Sprinkle with chives. You can toss the broccoli in with the sauce or serve it on the side. I love to serve this with brown jasmine rice!

This is a really awesome technique. I substituted pork chops for meat and we had some home made peach jam in the pantry. It turned out great, so I’ll definitely use it in future dinners.
This was one of the best things out of my kitchen lately. I didn’t add the sugar but included an extra garlic clove and some red pepper flakes. Divine!

This recipe is SO good. It’s very easy to throw together (even while holding a baby!) and is always delicious. It’s been become one of my weeknight go-to recipes. Definitely recommend this one!

Yes! You can easily omit,the flour; I didn’t use any tonight — just browned the chicken really well; it was just fine and as delicious as when I have used flour. Served w/jasmine rice and a medley of Asian stir-fried vegetables.
OMG this is one of the best recipes! It’s so easy and SO delicious! I will definitely be making this on repeat. I made it more WW friendly using sugar free apricot preserves and Swerve brown sugar. This a must have!!

This recipe was delicious! It was also so easy. I followed it as written, except I added some homemade pineapple hot sauce to give it some heat. We weren’t feeding any children, so that worked out well. I will be making this again, no doubt.

I made this last night and it was so good! And quick and easy to prepare. And it got the boyfriend seal of approval too! Next time I would steam the broccoli – I love roasted broccoli but I prefer the taste of steamed with asian meals. I also put some flaked almonds and coriander on top. This has inspired me to want to buy some of your books!
I forgot to coat the chicken in flour. I added chopped dried apricot and almonds to the finished dish. It came out very delicious. Thanks.

Thanks, this was yummy! I skipped the rice and used lemon pepper and salt-free Mrs. Dash on the sauce and the broccoli instead of regular salt and pepper. I also took your suggestion and mixed the broccoli into the chicken and sauce together and it tasted great the first night and when reheated again as leftovers. Thanks again!

I made this but with tofu (using a tofu/flour/cornstarch/garlic salt) pan fry first. We also did sauteed mushrooms and asparagus along with the broccoli. It was one of our favorite meals. Our toddler wouldn’t stop eating it!!
Amazing and really simple! The sauce was great and it was not overly sweet.
Loved it! The only thing I did different was add a touch of cayenne pepper to the sauce. Will definitely be making again.

Made as is per the recipe, it is a little too sweet for our family’s liking. I will make it again, but next time cut down on the brown sugar content and up the spice factor with chili paste.

Likely a top 5 recipe I’ve ever made! This was SO delicious, from the roasted broccoli to the apricot sauce. I was literally licking the spoon it tasted so good. Rave reviews from my family as well. This will be on repeat!
I just meal-prepped this tonight (eating it as I type) and have already decided it’s going into the rotation. I was worried about how sweet the sauce might be, so I added red pepper flakes and some fresh grated ginger to subdue the sweetness. Definitely a good choice!

I will say, my kids have snubbed their noses at all three…but ya know all they like is chicken nuggets and French fries. The fact that my husband and I glutinously shovel their portions into our mouths after they slink away in disappointment at the sight of a fine meal instead of grease covered crap, shows how freakin delicious it is (to anyone with taste).

Cooked this for 3 adults, so I increased to 1.5 pounds chicken breast and a 13 oz jar of apricot preserves. It’s a pretty and tasty dish. We ate every last bite! I added a scant 2 tablespoons of soy sauce to the preserves. After tasting, it was plenty sweet so I didn’t add the brown sugar. Whether you need the brown sugar probably depends on what brand of soy sauce and preserves you’re using. I’d bet you could swap out orange jam/preserves – maybe raspberry. Thanks for the recipe!

This is probably my favorite way to cook chicken now. This recipe is amazing! The only substitutes I made are that I blended up canned apricots in place of apricot jam (because that’s what I had on hand) and added a little bit of hoison sauce (to make up for some of that lost stickyness of the jam and because I love the taste!). The texture of the sauce didn’t seem to be affected by the blended apricots, it still got deliciously sticky and tasted amazing! Can’t wait to try it with tofu during Lent!
