These peanut butter iced lattes taste like a big peanut butter cookie. Easy peanut butter syrup, espresso, milk and TONS of crushed iced.

So I’ve been gatekeeping this peanut butter syrup recipe for a few years because I thought it would be going in my next book. I was almost sure of it!
After my lavender vanilla iced latte recipe in The Pretty Dish… I wasn’t sure I’d ever love a coffee recipe more.
And while I LOVE this one, a different recipe won out for my next book.
Therefore, here we are!
Time to show you how to make a peanut butter iced latte and be the happiest person on earth this summer.
First, the peanut butter syrup.
It’s so simple. And speaking of simple, it’s just like simple syrup! Water, sugar, peanut butter. I like to add in a little vanilla extract too.
The peanut butter syrup will last in the fridge too. It might get a little hard in the fridge, so you can always warm it up a bit before using or even just let the amount you need sit out for a few minutes.
I mix the syrup with espresso and milk. That is it!
Embarrassingly easy, right?
Now, to be clear, this is just a peanut butter iced latte. No chocolate, mocha, etc.
But! Of course, you can add some chocolate.
A drizzle of chocolate sauce would be perfect. Some sort of mocha syrup… whatever sounds good to you.
Because we all know there is no better combo than chocolate and peanut butter!!

Ingredients
peanut butter syrup
- 1 cup water
- ¾ c sugar
- ¾ cup pb
- ½ teaspoon vanilla extract
peanut butter iced lattes
- 2 ounces peanut butter syrup (or more!)
- 2 shots freshly brewed espresso
- 6 to 8 ounces milk
- peanut butter syrup
Instructions
- Whisk the water and sugar together over medium heat until the sugar dissolves. Whisk in the peanut butter until combined. Let the mixture bubble and simmer for 3 to 4 minutes, whisking often.
- Turn off the heat and let the mixture cool completely before using. You can store this in the fridge for about a week!

- Fill a glass with crushed add. Add the peanut butter syrup. Top with the espresso. Stir together. Add the milk on top and stir or shake.
- Serve!

I had a peanut butter latte recently, and it was definitely lacking, I knew it would be better if I could make it myself. Will definitely be putting this in my cold brew this summer. Now I can’t imagine what could’ve possibly won out over a peanut butter latte in your next book, it has to be GOOD!
Can you I adjust other ingredients to make without sugar?
Def love peanut butter with coffee so stirring this up right now! One quick note, the recipe doesn’t say when to add the vanilla? From other recipes I’m assuming when the mixture is taken off heat?
To make it less sugary use heated up agave syrup, water, and pb powder to create your pb syrup ;)

OMG, that syrup. I could eat it by itself with a spoon (and might have done so for a spoonful or two). As delicious as it is in coffee, I am very intrigued by the thought of it as an ice cream topping.
Great recipe but i got questions, i am still using it about 1.5 months later i think it still tastes good so what makes the syrup bad say a month later?
2nd question is there suppose to be a slightly char taste to the syrup or did i burn it? Which i actually like
The taste was so good.
I’m not fond of iced coffee, so no ice. I brewed the coffee, added the syrup, and enough milk to cut the coffee bitterness. Very tasty and not too sweet. Note that vanilla should be added after the pot is taken off the stove.
OMG this peanut butter syrup for the peanut butter ice latte is so good just made the drink. Thank you for sharing. The coffee I used was green mountain iced coffee pod
