Cucumber Prosecco Spritzer.
This cucumber prosecco spritzer is the cocktail of the summer! Refreshing cucumber syrup, chilled prosecco and extra bubbles over ice with lots of lime. Delicious and cooling!
Okay, it’s official!!
Cue all the exclamation points. I have our 2024 summer cocktail. And it is THIS!
This cucumber prosecco spritzer is made with cucumber syrup, a splash of seltzer and a light prosecco for the ultimate refreshing warm weather drink.

There are no words.
Except that this is such a fresh, light drink that just tastes like summer. It tastes like hot sunny days and pool splashing and party snacks and marshmallow clouds.
And the color!
The freaking color is beautiful. The pictures do not do the drink justice. It’s a lovely shade of light green that again, just appears to taste refreshing. Even before you take a sip!
To make the cucumber syrup, I blend a few mini cucumbers until pureed and then mix them with sugar and water. It’s like a traditional simple syrup, but cucumber flavored!
Once all that sugar is dissolved, I strain the cucumber syrup a few times to remove any bits that remain.
This stays great in the fridge for close to a week! Later this month, I’ll share one more drink you can make with this syrup so it never goes to waste!
The rest is simple. Mix the cucumber syrup with some lime juice, prosecco and club soda.
Stir it up and boom, it’s ready.
It’s no secret that I like to make cucumber cocktails.
I like to garnish this drink with a cucumber spear or wedges. You can also use limes.

Cucumber Prosecco Spritzer
Ingredients
cucumber syrup
- 4 mini cucumbers, cut into pieces
- ½ cup water
- ¾ cup sugar
spritzer
- 1 to 2 ounces cucumber syrup
- ½ ounce lime juice
- 4 ounces prosecco, or your favorite white wine
- 1 to 2 ounces cub soda
- cucumber spears, for garnish
- lime wedges, for garnish
Instructions

- Place the cucumbers and ¼ cup of water in a blender. Puree until smooth and no chunks remaining. Pour the mixture into a saucepan and add the sugar and remaining water. Bring the mixture to a light simmer, whisking so the sugar dissolves. Turn off the heat.
- Strain the mixture through a fine mesh strained at least once, maybe twice, to remove any extra bits. Pour the remaining cucumber syrup into a jar and store in the fridge for a few days.

- Fill a glass with crushed ice. Mix the cucumber syrup and lime juice in the bottom of the glass. Top with the prosecco or white wine. Top with the club soda. Garnish with the cucumber spear and limes. Taste and add more or less of anything you feel it needs, according to your own taste!

Looks delish! Going to try this weekend but there is an error in the recipe. You add 1/4 cup of water to the blender with the cucumbers. Do you then add the remaining 1/4 cup of water with the sugar in the saucepan? Or do you add the full 1/2 cup of water to the saucepan? Or is it just the 1/4 cup water/cucumber mixture with the 1/2 cup sugar?
Made these for Mother’s Day brunch today and they were a hit!
Thank you for updating the recipe to correct the addition of the “remaining water.” Made these this weekend for Mother’s Day and they were a hit. Also made it in a mocktail, eliminating the Prosecco and club soda and replacing them with lime seltzer.
