Gosh, I just love the spritz.
It’s so beautiful and bright. So bubbly! And photogenic. So delicious.
An aperol spritz is one of the only drinks I really missed and craved when I was pregnant. I love how bubbly and refreshing they are, especially on a hot summer day.
In fact, last week while on vacation I had the most *perfect* spritz. Which meant it was high time to share this one with you today.
When it comes to a classic aperol spritz, I tend to like a splash more of the bubbly than the aperol. Most recipes call for equal parts of aperol and prosecco, but I usually add just a hint more of the prosecco – and in this case, sparkling dry rosé! The effervescence gets me every time.
And when I make these for guests, they also love the extra splash of bubbly.
I love prosecco so much but also love to switch things up with a sparkling rosé. Make sure to grab one that isn’t very sweet. Combine the aperol and sparkling rosé in the glass, top with some soda and garnish with a few peach slices, because SUMMER!

A few other ways I like to fancy things up?
As mentioned above, I love to use a fresh peach slice in the summer instead of the orange slice. OR use it in addition to the orange slice. There’s room for everyone!
I also like to use frozen peach slices for ice cubes.

This is some summer brilliance right here. I think one of you may have actually told me about it YEARS ago. I’ve done it ever since. Buy a bag of frozen peaches and instead of using lots of ice in your aperol spritz, throw in a handful of frozen peaches. I add a little extra crushed ice too, just because I’m a sucker for crushed ice.
The peaches keep the drink cold, don’t water it down like ice cubes do AND add a little peach flavor to the drink. Which is incredible. It also often complements the rosé you’re using!
Plus the best bonus part: um the peaches are fabulous to eat as the thaw. Just imagine! Peach slices infused with aperol spritz flavors. OMG.
This is easily my summer cocktail this year! While I love tequila and soda for something on the lighter side, this rosé aperol spritz is so fun to make on the weekends.
And in the summer, I declare the weekend to start on Thursday.

Rosé Aperol Spritz
Ingredients
- crushed ice
- frozen peaches, used as ice cubes (optional)
- 3 ounces Aperol
- 4 ounces sparkling dry rosé
- 1 ounce club soda (plain or citrus flavor)
- fresh peach slices for garnish
Instructions
- Add the ice (and frozen peaches, if using) to a glass. Pour in the aperol and sparkling rosé. Give a quick stir. Top with the club soda. Drop in a fresh peach slice or two. Drink immediately!

Looks perfect! What brand of rose do you use?
if i want to drink sparkling rosé alone, i LOVE the Veuve one but it’s pricey. i tend to get the sparkling chandon brut rosé, it’s a good price point and i don’t mind mixing it into drinks either!

I was surprised that you said most recipes call for equal parts Aperol and Prosecco. I’ve always seen 3 parts Prosecco to two parts Aperol, and I think that’s what is on the bottle. Anyway, I think I’d definitely like it with rosé!
oh i haven’t even looked on the bottle!! LOL! I will have to see what their classic one is. they are so good!
The Aperol bottle has a diagram showing equal parts Prosecco and Aperol. I find Aperol too sweet for my taste, so it’s a good way of getting rid of the bottle. The best thing I can say about Aperol is it helped me really appreciate Campari.
