This season is just full of jewels. I mean, ACTUAL jewels right here with these babies. But seriously, I love SO MANY THINGS about this season and yes I know I sound like a broken record and no I will never stop loving fall.
First, apples. Yes yes yes. I want to consume everything with apples – the spice, the cider, the crisp, sometimes tart, sometimes sweet flavor? Adore it.
Second, squash and pumpkin. I know pumpkin IS squash but is sort of has it’s own category, does it not? I get excited about it, but it changes every year.
And third, POMEGRANATE!! Not only do I love the flavor (obsessed), love using it from everything from breakfast to dinner, but I love to use pomegranates as decor too. I could barely contain my excitement the other day when I saw a box of them in my grocery store.

These three things seriously make my year. It’s like the season just keeps getting better and better.
This is one of those drinks that I usually only make in the summer months. Remember my peach gin and tonic? Yes, it’s a huge staple. So refreshing and light.
And last winter, I actually ordered a gin and tonic on a snowy night, it was a smoked gin and tonic and had thyme and rosemary. But… it was just too much. Really didn’t taste right in the cold. It wasn’t as refreshing as I expected. I have high hopes for fall cocktails that warm you to your soul. You know?
The thing is that right now it’s still (finally?) 90 degrees here. I hate it, I’m not going to lie. But I don’t want to drink (or serve) hot apple cider when temps are in the 80s. So enter something like this!
Sure, I could always make an apple cider punch (and boy oh boy, I do) but sometimes you have nights that require a single cocktail, not a pitcher. Sometimes you want a fall drink made all for yourself, but not a warm one, because your face is still melting off outside.
THIS IS THE ANSWER!
Not only is it refreshing with a touch of fall flavor, but it’s the prettiest! Never going to say no to a drink when it’s actually jewel toned.

Pomegranate Gin and Tonic
Ingredients
- 2 ounces gin
- 4 ounces tonic water
- 2 ounces pomegranate juice
- 1 ounce freshly squeeze lime juice
- crushed ice
- pomegranate arils
- lime wedges
- rosemary sprigs for garnish
Instructions
- Fill a glass with a few pomegranate arils and crushed ice. Pour the gin over the ice, then the tonic. Stir in the pomegranate and lime juice and wedges. Stir a few times to combine. Serve immediately with a rosemary sprig popped in and pomegranate arils sprinkled on top.

I completely agree with you about use of pomegranate, it’s even an anti-oxidant, so that helps! The flavors are nice too by cutting the gin tonic bitterness with a little but not too much sweetness
