I live for pimento cheese BLTs! This creamy, cheesy spread is layered on sourdough with crispy bacon, juicy tomatoes and shredded romaine. Delicious and perfect for summer!
Cook the bacon in a skillet until it’s crispy and the fat is rendered. Chop the romaine lettuce and toast the sourdough bread.
Sprinkle the tomatoes liberally with salt and pepper.
To assemble the sandwich, spread 2 to 3 tablespoons of the pimento cheese on a slice of toasted bread. Top with 1 cup or so of shredded lettuce. Top with a few tomato slices. Top with the sliced bacon.
Finish with the other slice of toast and serve!
