Pimento Cheese BLTs

I live for pimento cheese BLTs! This creamy, cheesy spread is layered on sourdough with crispy bacon, juicy tomatoes and shredded romaine. Delicious and perfect for summer!

Ingredients

  • ½ cup pimento cheese
  • 8 to 10 slices bacon, cooked until crispy
  • 2 heirloom tomatoes, sliced
  • 2 ½ cups shredded romaine lettuce
  • 4 slices sourdough bread, toasted

Instructions 

  • Cook the bacon in a skillet until it’s crispy and the fat is rendered. Chop the romaine lettuce and toast the sourdough bread.
  • Sprinkle the tomatoes liberally with salt and pepper.
  • To assemble the sandwich, spread 2 to 3 tablespoons of the pimento cheese on a slice of toasted bread. Top with 1 cup or so of shredded lettuce. Top with a few tomato slices. Top with the sliced bacon.
  • Finish with the other slice of toast and serve!
